A Minty Fruit Smoothie

We are going to have pizza tonight, so an hour before I decided to line my stomach with a fresh minty and fruity smoothie.  This way I’ll feel a little less guilty knowing that I have fruit in my tummy before I consume huge amounts of pizza yumminess!

INGREDIENTS

1 small banana peeled
7 strawberries
1 pear sliced into chunks
A few sprigs of fresh mint
1 cup pineapple juice

METHOD

Blitz all the ingredients in a Nutri Bullet or blender until smooth

Serve with some ice or add a little water if the smoothie is too thick

Roasted Red Bell Pepper Chapatis

A tasty and healthy flat bread…One of our family favourites!

Peppers give immense flavour in cooking especially when it’s roasted! Packed with vitamin C, it’s great for when you have a cold. With both my little ones sniffling away and always comforted with a rolled up chapati in their hands when playing. I thought why not introduce the pepper to the chapati?

I was sooo happy with the result and so were they. A soft orange chapati with strong notes of pepper and coriander. I sent a couple for my Mum to try and she loved them. She wants the recipe! So this one is for you my dearest!

INGREDIENTS

1 red bell pepper
2 garlic cloves
Handful fresh coriander
¾ tsp salt or to taste
1 tsp coriander & cumin powder
½ tsp turmeric powder
½ tsp garam masala
250g chapati flour
1 tbsp sunflower oil
Boiling water to bind
Extra flour for rolling

Sneaky Mums & Their Recipes!

So it’s official! I am like my mum and we are exactly the same!! Both of us were very cheeky and sneaky today in getting our children to eat goodness as they are unwell. One big child, being me and my little ‘un. My mum made me an extremely spiced ginger tomato soup to help my cold and I made chapati flat bread with broccoli and cauliflower to get vegetables into my youngest!

It worked, the soup was so refreshing and allowed me to breathe again properly after days of being blocked up. Whilst my little one munched away on the green chapati not knowing that he was eating lots and lots of vegetable goodness! Worked out for both parties!….

INGREDIENTS

1 small broccoli in florets
1 small cauliflower in florets
1 clove garlic minced
½ tsp grated ginger
1 tbsp soft cream cheese
2-3 tbsp sunflower oil
200g chapati flour
1 level tsp salt
1 level tsp garam masala
1 heaped tsp cumin & coriander powder
Flour for rolling
Butter for spreading

METHOD

Boil the cauliflower and broccoli until tender.  In a food processor put the boiled florets with everything except for the flour

Whizz into a thick paste, will look a bit like a pesto, gradually add the flour to form a soft dough

Heat a non stick frying pan on a medium heat

Take about a tablespoon and a half of dough, roll into a ball, dust in some flour and gently roll out into a flat round approximately 6 to 7 cm

Place into the frying pan, wait for a minute or so until it bobbles, turn over and cook until both sides have a few brown spots. Make sure the flatbread is cooked all the way round

Serve with a little melted butter

A Baking Competition with TefalUK

I am so,so excited to announce my first ever Baking Competition here at Shivaay Delights.com.  I am teaming up with Tefal UK for a chance of all Shivaay Delights friends in the UK to win a “Sleek Black Awesome TEFAL OPTIGRILL

I have one and it is amazing, here it is in action @My Optigrill! . Not for just vegetarian food, the grill specialises in cooking and grilling all types of food to different culinary requests and needs.  A really smart piece of kit, just in time for Christmas too!

Fresh Linguine In A Leek & White Cheese Sauce

As you might be able to tell, I’ve started to love my leeks..I just can’t seem to get enough of them. So here I share a recipe that I made for lunch yesterday whilst my husband made this too, to accompany my dish.

What is even more special, is that I have been told by friends that they have a lot of leeks to use up…so I really hope you all enjoy this pasta dish, laced with the subtle taste of sweet leeks and a hint of cheddar cheese coming through!

INGREDIENTS

2 leeks finely sliced
⅓ tsp dried oregano
1 tbsp olive oil
½ cup milk
½ tbsp butter
½ tbsp plain flour
Salt to taste
Handful of grated mature cheddar cheese

Pre cooked fresh linguine 150-200g

METHOD

● In a medium saucepan heat the oil and butter on a low heat. Add the leeks and stir till slightly soft and translucent

● Mix in the flour and combine well, cook for 2 to 3 minutes

● Gradually stir in the milk and keep stirring until it gets slightly thicker

● Season with salt and throwing in the cheddar cheese. Stir so that the cheese melts and becomes one with the sauce

● Sit the linguine on top of the sauce whilst still in the saucepan. Combine into the sauce and you are ready to serve

A Hazelnut Brownie Ice Cream Cake

I adore brownies and always have them with some ice cream, so I felt a cake combined with both elements would be just great!  So here you have a brownie based sponge with ice cream in the middle.  Please feel free to add any type of nut or even extra chocolate if you wish.

INGREDIENTS

60g hazelnuts roughly chopped, some whole
60g self raising flour
130g caster sugar
50g cocoa powder
30g brown sugar
½ tsp baking powder
¼ tsp salt
⅓ cup milk + 40g milk chocolate melted
1 cup melted butter/low fat baking spread
3 medium eggs
1 tsp vanilla essence

Filling
Vanilla ice cream

METHOD

• Preheat oven to 180°c, grease and line two 20cm diameter cake pans

• Combine the dry ingredients in a large mixing bowl or food processor

• Add all the wet ingredients, mix well and stir in half of the hazlenuts

• Divide the mixture between the two pans, scatter over the rest of the hazelnuts and bake for 20-25 until a skewer comes out clean when poked

• Leave in the pan to cool for 10 minutes and then transfer to a cooling rack

• When completely cool take one brownie half and spread on whipped ice cream and sandwich with the other half

• I like my ice cream soft and runny but you could set it in the freezer before serving

Fresh Salsa Nachos

Dinner was ready but my husband very cheekily made some fresh salsa with cheese nachos. As soon as I realised he was chopping the ingredients, my camera quickly made an appearance. I captured quite a few pictures to share with you all.

I was soo tempted to eat some of the yummy ingredients as he prepped! But didn’t! It was totally worth the wait. You really can’t beat tangy fresh salsa, the flavours are incredible and with the cheese and crispiness of the tortilla….ummmm I don’t think I will have much dinner now!

INGREDIENTS

1 onion finely diced
1 tomato finely diced
2 tbsp freshly chopped coriander
1 avocado diced
1 chilli deseeded finely chopped
1/2 juice of lime
Pinch of salt

Tortilla chips
Grated cheese

Combine all ingredients in a bowl, mix slowly together

On a microwave safe plate, place a layer of tortilla chips with cheese, melt in the microwave oven for 1 minute

Transfer into a bowl and add the salsa

Now grab your favourite drink, sit back and munch away! Taking some over to Fiesta Friday…

No Bake Cocoa Nut Cookies

Don’t you just love when you give something really healthy to your children. Makes up for all the naughty snacks and foods they some how seem to get their hands on!

With this recipe both parent and child will be soooo happy! I can guarantee this, as this is how I felt yesterday when I made these no bake cookies!

Mine have already disappeared from the fridge mysteriously!! So another batch is about to be made, especially as I promised to take some over to Angie’s Fiesta Friday Party!

INGREDIENTS

2 large handfuls of macadamia nuts
3~4 handfuls of pitted dates
1 tbsp maple syrup
1 tbsp sunflower oil
1 heaped tbsp cocoa powder
White chocolate melted

METHOD

Add all the ingredients into a food processor and grind to a slightly grainy paste

Take a large pinch of the sweet mixture, form into a ball and then pat down into a small bite
size cookie

Take a little of the melted white chocolate and drizzle all over the prepared cookies

Chill in the fridge for 30 minutes or so then devour!
