Grilled Portobello Sandwich

I enjoy stuffing mushrooms with rice, garlic, cheese. However with the Portobello mushroom I wanted it to be the star of the dish.  This healthy and delectable sink in your teeth kind of loaded sandwich has to be my best sandwich creation to date.  The mushroom acts as a meaty substitute and the rest of the flavours are mellow untill you get glorious chunks of crumbly feta that brings a salty and sour taste to your tastebuds!  I could eat this sandwich over and over again!

INGREDIENTS

2 Portobello mushroom cups
1 large tomato sliced
1 avocado sliced
Handful of baby spinach
Feta cheese
Chilli & garlic dry mix
Mayonnaise
Toast 4 slices seeded bread
Butter
Salt to taste
Olive oil

METHOD

With a brush lightly oil both sides of the mushroom, having taken out the stalks.  Grill for 7 to 10 minutes until soft and slightly shrivelled

Take out of the the grill and generously season with salt, chilli and garlic powder

Butter the 2 toasts liberally, place the mushroom along with the rest of the ingredients, layer, season and then crumble feta over the top.  and complete with the second piece of toast

(Optional, a peri peri mayonnaise can be made by mixing a peri peri spice mix with a dollop of mayonnaise)

Serve your loaded mushroom toasted sandwich with lots of french fries!

Peppers give immense flavour in cooking especially when it’s roasted! Packed with vitamin C, it’s great for when you have a cold. With both my little ones sniffling away and always comforted with a rolled up chapati in their hands when playing. I thought why not introduce the pepper to the chapati?

I was sooo happy with the result and so were they. A soft orange chapati with strong notes of pepper and coriander. I sent a couple for my Mum to try and she loved them. She wants the recipe! So this one is for you my dearest!

INGREDIENTS

1 red bell pepper
2 garlic cloves
Handful fresh coriander
¾ tsp salt or to taste
1 tsp coriander & cumin powder
½ tsp turmeric powder
½ tsp garam masala
250g chapati flour
1 tbsp sunflower oil
Boiling water to bind

Chutney On The Cob

Do you fancy a taste of a barbecue Summer with a funky take on Indian cuisine, well then! This recipe is for you! I have just literally finished taking my last bite of corn with my spicy coriander and lemon chutney I just made. I couldn’t wait at all, to share this with you. If you have these ingredients…you must try this NOW!

It’s so healthy, filling and above all super tasty. Especially as an addition to a meal or in its own. Next time I want to team it up with some baked sweet potato wedges. My creative juices are flowing…I have many more recipes to write up! Better get down to it!

INGREDIENTS

1 bunch fresh coriander
1 red bell pepper
3 cloves garlic peeled
1 green chilli
1 tbsp Sunflower oil
Lemon juice to taste
Salt to taste

Sweetcorn on the cob pre grilled

METHOD

This is the easy bit!  Just place all the ingredients into a food processor and blitz for a couple of minutes until you get a grainy paste.

Don’t worry about stalks of coriander not being crushed, this way there is more flavour

Smother the chutney onto the corn, making sure all is covered.  Now ready to sink your teeth in?  ENJOY!

A Spicy Masala Sandwich To End 2014

This toasted tasty Chaat and Chutney masala sandwich we devoured for brunch on Christmas day.  Also my love of cheese came into play, with a twin serving of pan fried halloumi and mature cheddar cheese within the spicy hot double decked sandwich!  A creation only my husband could come up with.  He is not afraid of experimenting with strong flavours and spices.  He produces winning dishes all the time…Yes! I know…before you say it…I’m a lucky girl! 😉

You could really add anything to this sandwich as long as you incorporate the chutney and chaat masala.  The green, extremely spicy chutney came from my Mum’s kitchen and the masala is shop bought.  It really adds an Indian touch to the whole dish!

The INGREDIENTS we used

Mum’s Spicy Coriander Chutney
Chaat masala to taste
Pan fried slices of halloumi
Grated mature cheddar cheese
Slices of tomatoes
Wholewheat bread
Butter

METHOD

Place a buttered slice of bread in a panini maker.  Layer the tomato, sprinkle the mature cheddar cheese

Place another slice of bread and spread the green chutney and shake on the chaat masala

Take the pan fried halloumi and some extra tomato and layer onto the chutney base

Finally top with the last slice of bread and toast for 5-10 minutes in the panini maker, until the bread takes on a golden brown colour

Rupa’s Salsa Verde…

Salsa verde is a green salsa, it can be quite chunky but the one that was prepared by my youngest sister in law last Saturday, was something extremely special.  Rupa had called us round for dinner and  Oh my did we enjoy ourselves!  She had prepared grilled vegetable and golden halloumi skewers with a jewelled vegetarian couscous along with the salsa that tantalised our taste buds and made all the the different ingredients on the plate sing!

The consistency was very smooth and the colour so very vibrant.  I just deeply regret not taking a picture to show you all, I was too busy eating away! Sorry!
I have however, found a picture that shows the type of consistency of the salsa we had.  The colour here, is more a lime green but the colour you will achieve with this particular recipe will be slightly darker due to the mint. I hope you all enjoy it as much as we did.

INGREDIENTS

1 bunch parsley, chopped leaves only
1 bunch basil, chopped leaves
1 bunch mint, chopped leaves
2 tbsp capers drained
2 garlic cloves, roughly chopped
1 tsp dijon mustard
Olive oil as required
Sea Salt & Ground fresh pepper to taste

METHOD

Simply blitz all the above ingredients together in a food processor, grinder or Nutribullet if you have one

Pour into a bowl and leave in the fridge until your ready to serve

It’s All About Mum’s Coriander Chutney!

I have been eating this yummy chutney all my life but it is now, how much I appreciate my mum’s cooking even more! Knowing how difficult it is, running a household, working and looking after children, she made it look so easy. I have been blessed with two wonderful parents who both know how to cook and always make us food even today if we let on we are slightly hungry!

This coriander chutney is simplicity at its best. Mum has been delivering pots of the wonder stuff recently as I am on a chutney phase! I have been enjoying it in sandwiches. With Indian food and now in a melted cheese bagel! Try it for yourselves friends and do let me know…I will give the feedback to my Mum! Much love, D x

INGREDIENTS

1 bunch of fresh coriander
2~3 green chillies medium hot
2 tbsp fine grinded peanut powder
Salt to taste
Lemon to taste

Grated mature cheddar cheese
Bagels (I had red onion and chive)

METHOD
For the chutney

~ Blend all the ingredients together into a paste, season with the lemon and salt

~ Slice the bagel in half, toast on the grill. Spread the chutney on one half. Top with cheddar cheese

~ Sandwich together and grill in a panini maker. I used my Optigrill on a medium heat and toasted it until the cheese had melted into the chutney

~ Serve with some coleslaw or salad

Chilli Cheddar Cheese & Beans “In Toast”

One of the best things in life that I totally like to eat and feel comforted by, is a jacket potato with baked beans and cheese. It’s that gooeynesss of cheese that completely surrounds and coats the beans that I just can’t get enough of. So what better to start your day off with your most favourite food.

Instead of beans on toast, I made a “beans in toast” as a toasted sandwich plus cheddar cheese not forgetting the chilli aspect! I recently found these wonderful slices of chilli cheddar cheese slices at my local supermarket and absolutely have fallen in love with them. It gives the cheese extra bite which only the red chilli can do, as well as giving it such a Mexican influence to it too. Ummm I’m one happy chick!

INGREDIENTS

Slices of whole wheat bread
Chilli cheddar thin slices
1 tin baked beans
Butter
Smoked paprika

METHOD

Butter one slice of bread liberally. Place a slice of chilli cheddar cheese on top

Transfer to the grill/panini maker. Spoon on a couple of tablespoons of baked beans and sprinkle with a little smoked paprika

Close the grill lid, cook on a medium setting for about 5 to 7 minutes, checking how toasted you would like the bread

Once done, remove slowly, slice into half. I couldn’t resist a dollop of mayonnaise with it!

The Optigrill, My New Toy!

I am absolutely ecstatic to write about Tefal’s new “Optigrill” I have had it sitting in my kitchen just waiting to be turned on and yesterday was the BIG day! We fancied something Summery but without the hassle of setting up the barbecue, especially with the two boys running around in the garden. Wow what a result and we were treated to instant tasting grilled and charred vegetables and halloumi in a flat bread wrap!

The Optigrill is so versatile and self explanatory. It has different modes for various food types and I know I will be using it all the time now that it’s sitting on my kitchen work top just shouting out at me, “I’m here, use me!” Even this morning it made me a chilli cheese toasted sandwich for breakfast yummmmy!

You can use a griddle also to cook the vegetables but I found that I hardly used any oil with the Optigrill! So you get extremely tasty food, prepared easily and less oil! Triple bonus in my books!

INGREDIENTS

1 large aubergine, thinly sliced
2 courgettes, thinly sliced
1 large onion halved
2 tomatoes sliced
1 block halloumi cheese (reduced fat)
15/20 button mushrooms
2 garlic cloves minced
Smoked paprika
Salt to taste
1 tsp cumin powder

6 tbsp natural yoghurt
Handful of fresh coriander
Pinch of salt
1/3 tsp garlic granules
Squeeze of lemon juice

Ready made flat breads warmed

Time to grill baby!

Courgettes ~ massage a tiny amount of olive oil into the sliced courgette and place on the grill. I set it on a constant medium heat as my vegetables were thinly sliced. This way I pressed the lid down and was able to check the veg as it cooked

The courgette was cooked within 4 minutes or less. Put aside to cool

Aubergine~ sprinkle a little salt and add the cumin powder to the sliced aubergine. Massage a little oil also and place onto the Optigrill. Close lid and cook until charred with golden tan grill lines!

Onion ~ Peel segments away and grill for 6 to 8 minutes, until the onion produces a sweet aroma and is softened

Tomatoes ~ place slices onto the grill and don’t close, once charred set aside for the addition of mushrooms

Halloumi cheese ~ cut into thin slices and place directly onto the grill, close the lid and keep on the medium setting. Should be nicely warmed and charred within 3 to 4 minutes. No oil!

For the mushrooms ~ warm a teaspoon of olive oil, sauté the grilled tomatoes and garlic. Season with paprika and salt. Throw in the mushrooms, coat them in the sauce, cover and simmer on low for 10 minutes. The mushroom will release its own water adding to the sauce. Set aside to cool

For the yoghurt dressing ~ place all ingredients into a food processor, give it a good blitz and it’s ready!

Assemble the wrap…if the wrap is large, slice into half. Take two slices of grilled halloumi and then a little of all the grilled vegetables. Drizzle over with the coriander yoghurt dressing and roll it over
