Millionaire Treat

Recently all I’ve been buying from coffee shops is perfect squares of millionaire caramel shortbread. So when I saw a tin of ready made caramel in my cupboard I knew what I was going to make.

A crumbly biscuit base in which I used a low fat baking spread/butter. This is to make me feel better when eating it, as somewhere in the recipe is a low fat ingredient contribution. The chocolate and caramel are just fine!!! Lol 😉

I didn’t realise how simple it is to make this delicious treat. Just need to bake the base and the rest is just pouring, spreading and chilling!

One that the children would love to make and devour I’m sure!

INGREDIENTS

200g plain flour
165g low fat butter cold
70g caster sugar
1 tin ready made caramel (397g)
300g milk chocolate melted

METHOD

Preheat the oven to 150c.  Line a square baking tin with some grease proof paper

Throw in the flour, butter and sugar into a food processor and whizz until you have a breadcrumb like consistency

You can also mix the above ingredients using a mixing bowl and fingers

Take the base mixture and firmly level out using your fingers into the baking tin

Bake for 30 minutes or until lightly golden brown.  Set aside to cool completely

Pour over the caramel onto the shortbread biscuit base.  Spread evenly. Chill in the fridge for about 20 minutes

Finally remove the caramel and base from the fridge and pour on the melted chocolate

Set aside until the chocolate topping has hardened.  Gently slice the shortbread into squares

The caramel may ooze out…don’t worry!

Chunky Monkey Choc Cookies

These chunky chocolate chip cookies have just been made, photographed, blogged and eaten. The sweet (low fat) buttery aroma has filled every room in our home.

The main reason for making these today is my adorable 4 year old nephew. I just had to treat him!

INGREDIENTS

300g plain flour
2 tsp baking powder
120g soft brown sugar
150g low fat butter spread
2 eggs
1 packet chocolate chips

METHOD

Preheat the oven to 180°c.  Line two baking trays with greaseproof paper

Take all ingredients apart from the chocolate chips and combine well in a food processor or large mixing bowl

Fold in the chocolate chips.  Roll one large heaped tablespoon of cookie dough into a ball and gently flatten after placing on the baking tray

Bake for 15 to 20 minutes until golden brown in colour

Chewy Ginger Stem Cookies

My nearly 4 year old has a really bad cold so I thought the best remedy would be to give him some ginger! So ginger went into his lentil dal and ginger went into the delicious yummy sweet ginger stem cookies.

I adapted the recipe from Ina, The Barefoot Contessa and decided to warm things up with some mixed spice. The gentle heat of the spice along with the sweetness of the maple syrup makes for a delightful combination. Crunchy on the outside and chewy on the inside. An awesome treat any day of the week but even more so when you’re unwell!

INGREDIENTS

2½ cups plain flour
1 tsp baking soda
3 tsp mixed spice
¼ tsp salt
½ tsp ground ginger
1 cup dark brown sugar
¼ cup sunflower/vegetable oil
¼ cup maple syrup/honey
1 large egg
1 cup crystallized ginger
Sugar for rolling cookies
Oil to roll

METHOD

Preheat oven to 180°c and line 2 baking trays with some grease proof paper

Sift all the dry ingredients together and set aside

In a mixer on a medium speed, whizz the brown sugar, oil and maple syrup for 5 minutes

Add the egg and reduce the speed to low, mix for 1 minute

Slowly add the dry flour mixture into the mixer. This in turn should form a sticky soft pliable cookie dough. You may need to throw in a bit more flour, also stir in thr crystallized ginger

Grease the palm of your hands with a little oil, take a tbsp of cookie dough. Roll into a ball and then pat down to flatten into a 4-5 cm disk

Place in the oven for 13 minutes and remove to cool on a wiring rack

Repeat for the rest of the dough. The cookies will get crunchier as they cool down but will remain chewy inside

To cookie or not to cookie… 😀

For a while now I’ve been having some serious cravings for cookies ever since my dear friend Saloni posted her oh-so decadent creation on Facebook a few days ago. Ah, ’em beauties! I had to bake a batch and pronto… I always have this urge to cook/bake when I see something that divine looking. Well, it sure did the trick I guess. Cause there I was, back at the drawing board trying to design the perfect cookie that would not only be visually appealing but also have a nice flavor combination. The latter was a no-brainer really. There had to be chocolate. Why would someone bake cookies without chocolate?
A crime, if there wasn’t any chocolate! 😛 A quintessential ingredient for all cookies awesome! 😀

Chocolate Chip & Sweet Cookies

I had butter, sugar and chocolate chips….sooooo these soft, crumbly golden brown cookies came about. My 3 year old and husband were over the moon. The only thing was that they were so soft that they kept crumbling and my little one loves eating things that are whole! So it turned into a bit of a saga! Lol!

Nevertheless he still gobbled them up! I hope you all enjoy them as much as we did!

INGREDIENTS

350g plain flour
150g soft brown sugar
200g low fat butter
2 tsp baking powder
2 eggs
150g chocolate chips
100g M&M’s

METHOD

Preheat the oven to 180°c.  Line a baking tray

Mix the flour, sugar, butter, baking powder, eggs til combined

Add in the chocolate chips and M&M’s

Using a spoon, place a heaped tablespoon of cookie dough on the baking tray, spacing them apart as they will spread when baked

Bake for 20 minutes until soft anf golden.  Gently place on a cooling rack

Make a cup of tea…grab a cookie and sit back, enjoy!
