Baby Sweetcorn Soup

I have a wonderful soup maker gifted from Tefal but I fail to use it regularly.  I love clear soups with chunky vegetables happily floating away in a tasty seasoned broth.

I feel SO satisfied after having a bowl or two and am now absolutely adamant to make more soup for myself!  This is a very simple recipe I put together today.  I used my soup maker machine but it can be cooked all in a saucepan as a one pot soup dish.

I hope you enjoy this spring time soup.  Here’s to more soups being made!

INGREDIENTS

8-10 baby sweetcorn chopped
1 small onion chopped
1 tomato chopped
2 celery sticks sliced
1 litre water
2 cubes vegetable stock
2 handfuls of small pasta shells
Salt to season
Garlic and chilli granules optional

METHOD

Place all the ingredients into a soup maker or in a saucepan on a medium heat to simmer.  Cook through until soft.

Serve with a little grated cheddar on top and some fresh bread

Mature Cheddar Soufflé with Tefal

It is difficult making soufflés but what if I told you, I have a machine that will not only mix the ingredients but cook the base of the soufflé and all you have to do is follow the simple instructions and place the soufflés to bake.

INTERESTED?  I’ve caught your attention right?!

Ok, so I’m going to take you back to August last year when I was approached by Tefal to trial out a new kitchen product, and what a product it is!  I am now allowed to show this wonderful piece of apparatus as it is about to be on UK shelves in September this year.  It proved to be a very popular and extremely useful tool in the kitchen.

It cooks, chops, mixes, whisks.  Making all types of dishes from your simple sauces to exquisite sweet delicacies. Not forgetting hearty meals that can be prepped and cooked in the one machine, especially for those Autumn and winter nights approaching.  You are able to plug this in, follow the recipe, set the Cuisine Companion, then sit back with a large glass of vino

I will be making many more recipes with the Tefal CC but for now I will indulge your eyes and tastebuds with these mature cheddar cheese soufflés!

INGREDIENTS

40g plain flour
30g butter
500 ml milk
150g grated mature Cheddar cheese
4 eggs
Salt & pepper to taste

METHOD

Preheat the oven to 180°c.  Place the flour and milk in the cuisine companion food processor with the mixer attachment.  Season with salt and pepper then mix at speed 7 for 1 minute,  Add the butter, launch the sauce programme for 8 minutes, set at 90°c speed 4

In the meantime separate the egg whites from the yolks.  At the end of the program, throw in the grated cheddar, mix for 1 minute at speed 8.  Combine the yolks in to the mixture and mix for 45 seconds

Pour the cheese mixture into a large bowl and wash the food processor bowl

Place the egg whites into the cleaned bowl, fit with the mixer attachment again.  Start the food processor at speed 7 for 7.5 minutes without the stopper

Grease 6 to 8 small glass ramekins, gently fold the egg whites in to the cheese mixture.  Pour individually up to the top of each ramekin.  Bake for 20 to 25 minutes, without opening the oven door.  The soufflés will be ready when risen, golden brown and still have a little wobble to them.  Eat immediately for a fluffy sensation

#Tefal Easy Soup..So Excited!!!

Last week, Tefal UK got in touch with me and asked if I would like to sample their “Easy soup” homemade soup machine?

I jumped at the chance, especially having done a recent interview with Soupe du jour in London’s Soho. The Foodie place to be! Interview coming up soon…

I started off with a simple yet tasty asparagus soup for Spring with potato for body. Garlic to add oomph and boy did it do that!!!

So so happy with my Tefal Easy Soup..fresh soup at a press of a button. What more could I ask for?! Thank you Tefal UK

INGREDIENTS

3 medium potatoes peeled and cubed
Bunch of asparagus chopped
2 garlic cloves peeled
600ml water
1 vegetable stock cube
1 tsp ground cumin powder
Salt to taste

METHOD

Add all the vegetable ingredients along with the seasoning into the Tefal easy soup

Pour over the water, close the lid, turn on the power and simply press the creamed soup option and then the start button

In 23 minutes flat you’ll have this to dip some fresh bread into…

A Baking Competition with TefalUK

I am so,so excited to announce my first ever Baking Competition here at Shivaay Delights.com.  I am teaming up with Tefal UK for a chance of all Shivaay Delights friends in the UK to win a “Sleek Black Awesome TEFAL OPTIGRILL

I have one and it is amazing, here it is in action @My Optigrill! . Not for just vegetarian food, the grill specialises in cooking and grilling all types of food to different culinary requests and needs.  A really smart piece of kit, just in time for Christmas too!

It’s All About Mum’s Coriander Chutney!

I have been eating this yummy chutney all my life but it is now, how much I appreciate my mum’s cooking even more! Knowing how difficult it is, running a household, working and looking after children, she made it look so easy. I have been blessed with two wonderful parents who both know how to cook and always make us food even today if we let on we are slightly hungry!

This coriander chutney is simplicity at its best. Mum has been delivering pots of the wonder stuff recently as I am on a chutney phase! I have been enjoying it in sandwiches. With Indian food and now in a melted cheese bagel! Try it for yourselves friends and do let me know…I will give the feedback to my Mum! Much love, D x

INGREDIENTS

1 bunch of fresh coriander
2~3 green chillies medium hot
2 tbsp fine grinded peanut powder
Salt to taste
Lemon to taste

Grated mature cheddar cheese
Bagels (I had red onion and chive)

METHOD
For the chutney

~ Blend all the ingredients together into a paste, season with the lemon and salt

~ Slice the bagel in half, toast on the grill. Spread the chutney on one half. Top with cheddar cheese

~ Sandwich together and grill in a panini maker. I used my Optigrill on a medium heat and toasted it until the cheese had melted into the chutney

~ Serve with some coleslaw or salad

Chilli Cheddar Cheese & Beans “In Toast”

One of the best things in life that I totally like to eat and feel comforted by, is a jacket potato with baked beans and cheese. It’s that gooeynesss of cheese that completely surrounds and coats the beans that I just can’t get enough of. So what better to start your day off with your most favourite food.

Instead of beans on toast, I made a “beans in toast” as a toasted sandwich plus cheddar cheese not forgetting the chilli aspect! I recently found these wonderful slices of chilli cheddar cheese slices at my local supermarket and absolutely have fallen in love with them. It gives the cheese extra bite which only the red chilli can do, as well as giving it such a Mexican influence to it too. Ummm I’m one happy chick!

INGREDIENTS

Slices of whole wheat bread
Chilli cheddar thin slices
1 tin baked beans
Butter
Smoked paprika

METHOD

Butter one slice of bread liberally. Place a slice of chilli cheddar cheese on top

Transfer to the grill/panini maker. Spoon on a couple of tablespoons of baked beans and sprinkle with a little smoked paprika

Close the grill lid, cook on a medium setting for about 5 to 7 minutes, checking how toasted you would like the bread

Once done, remove slowly, slice into half. I couldn’t resist a dollop of mayonnaise with it!

The Optigrill, My New Toy!

I am absolutely ecstatic to write about Tefal’s new “Optigrill” I have had it sitting in my kitchen just waiting to be turned on and yesterday was the BIG day! We fancied something Summery but without the hassle of setting up the barbecue, especially with the two boys running around in the garden. Wow what a result and we were treated to instant tasting grilled and charred vegetables and halloumi in a flat bread wrap!

The Optigrill is so versatile and self explanatory. It has different modes for various food types and I know I will be using it all the time now that it’s sitting on my kitchen work top just shouting out at me, “I’m here, use me!” Even this morning it made me a chilli cheese toasted sandwich for breakfast yummmmy!

You can use a griddle also to cook the vegetables but I found that I hardly used any oil with the Optigrill! So you get extremely tasty food, prepared easily and less oil! Triple bonus in my books!

INGREDIENTS

1 large aubergine, thinly sliced
2 courgettes, thinly sliced
1 large onion halved
2 tomatoes sliced
1 block halloumi cheese (reduced fat)
15/20 button mushrooms
2 garlic cloves minced
Smoked paprika
Salt to taste
1 tsp cumin powder

6 tbsp natural yoghurt
Handful of fresh coriander
Pinch of salt
1/3 tsp garlic granules
Squeeze of lemon juice

Ready made flat breads warmed

Time to grill baby!

Courgettes ~ massage a tiny amount of olive oil into the sliced courgette and place on the grill. I set it on a constant medium heat as my vegetables were thinly sliced. This way I pressed the lid down and was able to check the veg as it cooked

The courgette was cooked within 4 minutes or less. Put aside to cool

Aubergine~ sprinkle a little salt and add the cumin powder to the sliced aubergine. Massage a little oil also and place onto the Optigrill. Close lid and cook until charred with golden tan grill lines!

Onion ~ Peel segments away and grill for 6 to 8 minutes, until the onion produces a sweet aroma and is softened

Tomatoes ~ place slices onto the grill and don’t close, once charred set aside for the addition of mushrooms

Halloumi cheese ~ cut into thin slices and place directly onto the grill, close the lid and keep on the medium setting. Should be nicely warmed and charred within 3 to 4 minutes. No oil!

For the mushrooms ~ warm a teaspoon of olive oil, sauté the grilled tomatoes and garlic. Season with paprika and salt. Throw in the mushrooms, coat them in the sauce, cover and simmer on low for 10 minutes. The mushroom will release its own water adding to the sauce. Set aside to cool

For the yoghurt dressing ~ place all ingredients into a food processor, give it a good blitz and it’s ready!

Assemble the wrap…if the wrap is large, slice into half. Take two slices of grilled halloumi and then a little of all the grilled vegetables. Drizzle over with the coriander yoghurt dressing and roll it over
