Fuss Free Vegetarian Biryani

image

Sometimes I do wonder if I can invest more time in photography because of all the wonderful pictures I see my fellow food bloggers post. I do feel strongly however that it is all about the food and recipes so I like to share the recipe as soon as possible and as many recipes as I can.

I do hold my fellow food bloggers in very high esteem that take skilled food photographic pictures. I hope one day to be as half as good as them!

This fuss free biryani, I made a few days back. It went down really well with the in laws and we especially enjoyed the crisped rice that baked to perfection.

Hope you enjoy this dish and are having a wonderful weekend. Much love, D x

Comforting Food Always!

image

I always find myself making and discovering new recipes but don’t tend to make recipes that I’ve previously developed. Not because it becomes repetitive, more that I’m always looking for new things to cook!

So, this weekend I decided to change things up a bit and go back to a recipe that I made a while back and adored the first time round. I made the tomato sauce a bit more Mexican and spicy and reversed the filling and sauce around. This is The first dish and now for what we had at the weekend. I think it makes for a nice winter meal as the heat of the spices warms you through.

So very easy to prepare in advance if you have guests coming round or so quick to make when you want a simple, fast meal. Hope you all enjoy it!
Have a mesmerising Monday, much love D x

Red Pepper & Lime Risotto With Feta

image

I have had this fusion risotto running through my mind for quite a while now. Yesterday I had all the ingredients I needed, so “hey presto!” it was created, made and devoured very fast.
A Mexican base with sweet, earthy notes of red pepper and a sour lift from the lime. Only then to top it off with some Feta cheese, for that Greek influence.

Oh my friends…you have to try this and tell me how it goes..Have a wonderful Wednesday and enjoy. Much love D x

INGREDIENTS

1 red bell pepper diced
2 garlic cloves minced
1 tbsp olive oil
1½ cup arborio rice
1 litre vegetable stock
Salt to taste
Juice of half a lime
Feta cheese crumbled

METHOD

image

● Heat the oil in a large non stick saucepan on a medium heat. Sauté the pepper for a couple of minutes and throw in the rice. Mix and cover each grain in the oil

image

● Start pouring a ladle of vegetable stock one at a time into the rice mix. Keep stirring on a low to medium heat

● Once the stock is absorbed add another ladle full into the saucepan. Continuously mixing

image

● This should go on until the rice becomes tender and soft and the risotto creamy

● Season with salt and stir in the lime juice. Serve with a topping of crumbled feta cheese

Potato & Spinach Vara Canapés

I will be making these again today…so had to share! Have a super spicy Sunday..I know I will, with these 😉

Shivaay Delights

After much love for the saag aloo recipe earlier this week I thought I would use the same ingredients but prepare it in a different way. Behold the aloo saag canapé, the potato and spinach vara balls. Ideal to be served at a party or social gathering with drinks.

image

Typically an Indian starter or snack the vada is normally heavily spiced and seasoned but to give it a more refreshing taste, I changed it so that the potato filling is more refreshing and light. Butter is not added to the original potato vara but I wanted a comforting taste and I think along with the spinach which is also a new addition I have achieved this!

Easy to make and prepare in advance or semi prepare the potato mixture into balls and fry off in the chickpea batter when your guests arrive, so that they are hot and crispy! Enjoy!…
