A Vegetarian Spanish Sausage & Bean Medley

I had this packet of mini vegetarian cocktail sausages sitting in my freezer collecting ice, that I had forgotten about. So when I saw the other ingredients I had to work with I thought the sausages would make the perfect satisfying addition.

I remember having seen a Spanish recipe for sausage and white bean casserole a while ago and my mind took my fingers and started to work on my very own version. A very satisfying and warming meal, no need for extra carbs such as bread or pasta. An immense dish with Mediterranean flavours that are always a winner for me! The spinach lifts the recipe at the end and the overall result is a feast for the eyes. Definitely a recipe I will be making again and again!

INGREDIENTS

280g Vegetarian mini cocktail sausages
1 red bell pepper diced
1 tin butter beans, drained & rinsed
2 garlic cloves sliced finely
10 cherry tomatoes halved
3 large handfuls of baby spinach roughly chopped
1 tbsp olive oil
⅓ tsp dried red chilli flakes
⅓ tsp dried oregano
½ tsp smoked paprika
⅓ tsp garlic granules
Salt to taste
Fresh lemon to taste

METHOD

• Sauté the pepper, chilli flakes and garlic together on a low heat until pepper is tender, mix in the tomato and crush a little

• Add paprika, oregano, garlic granules and salt, mix well and add the sausages

• Cook for 5-7 minutes or sausages upon instruction. Throw in the butter beans and squeeze in some lemon juice

• Cover and cook for 10 minutes on a low heat. Put in the spinach at the end, combine well and serve

Veggie Chilli Cheese Hot Dogs @ Fiesta Friday!

I’m rolling in my hot dog cart, they are vegetarian but will definitely appeal to all. I’ve had this surprise up my sleeve for quite a while and had to share them at my generous friend Angie’s weekly Fiesta Friday Party over @ Angie’s home, the Novice Gardener

Being a vegetarian I’ve always been intrigued by the wonder of the famous hot dog..everyone loves them so. I too adore the aroma of the sweet fried onions when it wafts in the streets when I’m shopping on a busy Saturday afternoon in town. So here I recreate the feeling I always have to devour these and now a vegetarian option! So excited!

The next step for me is to make my own vegetarian sausages. If anyone has a recipe please feel free to link it up to the post! This time I couldn’t resist but to buy these soya based Frankfurters..they are just so tasty. I hope you all enjoy these hot dogs and here’s to a gorgeous weekend for us all! Much love, D x

INGREDIENTS

For the chilli
1 tsp smoked paprika
3 cloves garlic crushed
1/4 tsp cumin powder
1/2 tsp salt or to taste
100g tomato crushed passata
200g frozen soya mince

1 large white onion sliced into crescents
Drop of balsamic vinegar
Pinch of sugar
2 tsp sunflower oil

Pre prepared vegetarian sausages
Grated cheddar cheese
Tomato ketchup
Mustard
Hot dog rolls

METHOD

Heat up 1 teaspoon of oil in a medium saucepan, sauté the garlic with the smoked paprika for 2 minutes

Pour in the tomato passata, sprinkle in the seasoning and cumin powder, simmer for 5 to 7 minutes

Stir in the mince, cover and simmer on a low for 15 minutes

In a shallow frying pan heat up a little oil, stir fry the onion with the balsamic vinegar and sugar until the onion is soft and browned

Assembling the veggie chilli cheese hot dog

Slice the roll longways, spoon in some of the chilli, place 1 or 2 sausages onto the chilli, smother with the onions and cheese. Add mustard and ketchup and enjoy!

Mother’s Day Macarons For Me ♡

First of my two treats! Well three really..If you count breakfast that was made for me too!

Raspberry, vanilla and chocolate macarons! My husband ordered them for me and they were a present from my youngest baby!

We all had one! And OMG!!! They are divine…sweet, crispy, gooey and incredibly tasty and flavourful!
Especially the raspberry one, with a tangy seeded raspberry jam running through it…ummmm!!!

Breakfast this morning was delicious…made and assembled by my husband on behalf of my two sons! 
Potato waffle, vegetarian Mediterranean sausages, roasted seasoned courgette slices and juicy cherry tomatoes…Not forgetting the soft fried egg…

To top it off…The box set of Grey’s Anatomy! I’ll be drooling over Mc Dreamy anytime I want now! Soooo very happy!
