Pizza Dip for Popcorn

We are so used to now having different flavours of popcorn with chilli and chocolate and lime and lemon infused through the kernel.  However how about a popcorn dip?

You’re either a salted or a sweet popcorn fan. I love both! 😉 I had popped a bag of salted corn in the microwave and then thought I wanted pizza too.

So this is how the inspiration came for the fresh tomato pizza dip!

Easy, quick and healthy!!! Great if you want to snack on something light but it’s bursting with flavour

INGREDIENTS

1 punnet of mini plum tomatoes
2 garlic cloves
1 tsp dried oregano
Salt to taste
1 tbsp extra virgin olive oil
1 small green chilli optional

METHOD

Blitz the  tomatoes, garlic, salt and chilli together in a blender

In a medium saucepan heat the olive oil with the oregano on a slow heat

Pour in the tomato mixture, stir well. Bring the dip to a medium boil and then simmer for 15 minutes

Serve your tangy dip with fresh salted popcorn

Smoked Paprika Plantain Chips ~ BAKED!!!

Growing up we were treated to plantain chips made by our parents.  Matoke as we call it, as both my parents were born in Africa.  It was prepared, sliced by hand and then deep fried.  The result would be a hot soft fluffy chip!  I have always loved them and remember my Dad buying packets of these chips in a range of flavours when I was pregnant for me to keep my energy levels up!

It was only last week that I spotted some plantain in our local supermarket.  I knew instantly that I wanted to create something with them.  So..I peeled them, sliced thinly in a food processor and set out to season and Bake!  Yes BAKE!  This way they remain healthy and I hardly used any oil!  Have a go! It’s so easy and you get fresh hot healthy plantain chips to nibble on, what could be better?

INGREDIENTS

2 large plantain, peeled, thinly sliced
1 tsp smoked paprika
½ to 1 tbsp sunflower oil
1 tsp salt or to taste

METHOD

• Preheat the oven to 200°c/400°f. Line 2 baking trays with greaseproof paper.  I used my pizza trays

• In a large bowl put all the ingredients together and gently massage the oil, salt and paprika into the plantain

• Lay the slices of plantain on the tray and place in the oven for 20-30 minutes.  Turn them over half way

• They will brown quickly so do keep an eye on them,  they will start to crisp up and this will continue as they cool down

• Eat as soon as possible, but they will keep for a day in an airtight container

Granola bars with toasted coconut

I keep seeing recipes with oats everywhere and to be honest I haven’t made anything with them since making flapjacks when I was younger! So I thought it was time.

My little ones love dried fruit so I had to use that in the bar. I’m hoping to make up some oaty recipes soon but felt that I should make a recipe tried and tested for now. I chose these granola bars as they looked so tempting! From My Humble Kitchen

I replaced the cranberries with a mixture of dried fruit and wanted a toasted tasting bar so before the sticky granola mixture went in to the oven to be baked I scattered over a whole layer of snowy desiccated coconut. It came out all crunchy and added to this great recipe
