Omg! The Lemon drizzle cake has made a comeback!
A cheese and egg dish which can only be described as ultimate comfort on a plate. Is a brilliant nutritious breakfast or a luxury delight at brunch!
Prep takes a minute, place in the oven and when the timer goes off your cheese, egg in toast is ready!
INGREDIENTS for 1
Slice of bread
1 medium egg
Grated cheddar cheese
Preheat oven to 200c
With the back of a tablespoon press firmly into the centre of the bread. Making an indent for the egg to sit in
Lightly butter the edges of the bread
Crack an egg into the indent. Sprinkle the edges with grated cheese
Place in the oven for 15 minutes. You should get a runny egg!
Our nephews have come round to stay and we normally have cocoa pancakes with hazelnut spread but…chocolate chunk muffins were the choice for today!
I just looked up chocolate muffins and was very lucky to find this recipe! One I know I will be using again and again.

2 cups all-purpose flour
1 cup white sugar
3/4 cup chocolate chips
1/2 cup unsweetened cocoa powder
1 1/2 teaspoon baking soda
1 teaspoon vanilla extract
1 cup plain yogurt
1/2 cup milk
1/2 cup vegetable oil
1/4 cup chocolate chips
Preheat oven to 200°C. Grease 12 muffin cups or line with paper muffin liners
Combine flour, sugar, 3/4 cup chocolate chips, cocoa powder, and baking soda in a large bowl
Whisk egg, yogurt, milk, and vegetable oil in another bowl until smooth; pour into chocolate mixture and stir until batter is just blended
Fill prepared muffin cups 3/4 full and sprinkle with remaining 1/4 cup chocolate chips
Bake in preheated oven until a toothpick inserted into the centre comes out clean, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack
