I just have to introduce you all to the new member of the Shivaay Delights family ~ Alfie is our 11 week old mini orange lop in house rabbit!  He’s very cute, adorable and cuddly but is extremely cheeky, similar to my 2 boys 😉

Loving him hopping around our living space. Thoroughly enjoying having him with us.

Carrot, Strawberry & Ginger Smoothie

Every morning we have a new flavour of smoothie. Having Mr Shivaay Delights working from home gives me the opportunity to spoil him with healthy breakfast shakes.

If I forget then I will be subtly reminded to make him one. So I guess he is enjoying the smoothies that come flying out of our kitchen.

INGREDIENTS

1 medium carrot peeled and chopped
Handful of strawberries
2 apples cored and chopped
Dash of orange juice
Fresh ginger to taste

METHOD

Put all the ingredients into your blender/nutri bullet.  Blitz to a fine blend

Add more water if too thick to achieve desired consistency

The Weekend Detox Soup

This week has been a very naughty week in regards to food for me. A ll I have been munching on is chocolate, chocolate and more chocolate. I didn’t feel guilty so much during the week as I did this morning!  I had to eat something good for me, healthy and yet have a detoxing effect. 

I’ve always heard my Mum telling me and practically feeding me the goodness of green mung beans.  A natural cleanser, full of protein and a general all rounded nutritious bean.  Normally I cook them as an Indian Curry but that won’t help me with the detox side of things.  I took my large jar of mung beans and created this healthy dish.  Simplicity at it’s best!  Enjoy friends…

INGREDIENTS

1 cup mung beans
3/4 cups water
Vegetable stock cube
1 garlic clove crushed
Salt and chilli powder to taste
Fresh lemon juice

METHOD

Boil the mung beans in the water along with the vegetable stock cube, once brought to the boil place on a medium simmer for 15 minutes

Add in the crushed garlic, salt and chilli powder, simmer for a further 10 minutes or until the beans are soft and tender

Serve up in a large bowl and squeeze in a generous amount of lemon juice.  Start eating and let the detox begin!

Paneer In Urad Daal

Paneer and black gram split lentils, I was yet to combine in a dish, so yesterday was the day. I was extremely pleased with the result as I managed to get a mushy daal with bags of flavour. It tasted very similar to a daal makhani, as the paneer provided the wonderful creamy feel and flavour

Ummm…I was in heaven! I’m sure you all will love it too, guaranteed!

INGREDIENTS

1 cup cubed paneer
1 cup split urad, white split gram lentils
½ tsp soda bicarbonate
¼ tsp turmeric
Boiling water
1 tbsp sunflower oil
½ tsp mustard seeds
1 onion diced finely
1 tomato chopped
1 tsp garam masala
2 tsp dried cumin & coriander powder
Salt to taste
Lemon juice to taste
½ cup tomato passata/crushed tomato
Fresh coriander optional

METHOD

Boil the urad daal with the bicarbonate of soda and turmeric until soft and mushy. Once cooked leave aside

In a large non stick saucepan, heat the oil and mustard seeds on a medium heat.  Fry off the onion and fresh tomato

Add all the spices and stir fry for a couple of minutes

Pour in this tomato passata, along with the cooked daal and its water.  Gently place in the cubed paneer into the saucepan

Simmer through on a low heat for 20 minutes or so, stirring occasionally

Garnish with fresh coriander and serve with freshly made hot chapatis

Alphonso Mango & Walnut Smoothie

This time last year we were all craving Alphonso Indian mangoes!
Luckily this year we have been able to have them over from India and we are definitely making the most of them.

Extremely sweet in taste and velvety in texture! Allows this particular variety of mango to be a natural partner to acidic strawberries in a smoothie.

The walnuts add nutrition but also gives body to the whole drink. One that goes on my super healthy smoothie list!

INGREDIENTS

1 alphonso mango
Large handful of strawberries
1 clementine
2 shelled walnuts
Water

METHOD

Blitz all ingredients together. For a creamier taste add a tablespoon of natural yoghurt

A Vibrant Halloumi & Quinoa Salad

Quinoa is one of my favourite grains   I wanted to make a vibrant colourful and extremely tasty salad dish as the sun is out here in the UK and wanted something fresh and light to keep me going all day.  This particular recipe has done exactly that! I have not had to snack on anything since I had it at lunch and I’ve just finished my dinner so it really works!

A few steps to prep and then just to mix all together, voila!  You have your healthy salad for the day.

INGREDIENTS

1 small cup quinoa cooked
Halloumi pan fried and diced
1 medium cucumber diced finely
2 tomatoes diced
4 spring onions slice
1 tin sweet corn drained
Baby spinach sliced
Salt to taste
Cayenne pepper
1 tsp cumin & coriander powder
Lemon juice to taste

METHOD

I fry the halloumi cheese by thinly slicing and then placing into a hot non stick pan with olive oil.  Fry off on both sides until golden brown

Place all the ingredients into a large bowl.  Mix thoroughly so everything is fused together

Blueberry & Super Seed Smoothie

I do not get through much fruit unless its in a cake on a cake or around a cake!

So having invested in a smoothie maker is the best thing I could have done for me especially! I love chewing on seeds but am not partial to the goji berry. Which is extremely good for you.

This way I get all my antioxidant goodness in the one glass first thing in the morning and I’m ready to face the day with a healthy outlook…until I eat the naughty treat I shouldn’t have had at lunch…lol 😉

INGREDIENTS

Large handful of blueberries
1 medium banana
1 satsuma
Sprinkling of seeds and goji berries
Water

METHOD

Using the NutriBullet or a blender.  Place all the ingredients in and blitz til desired consistency

If too thick, stir in more water…
