This week I have gone Egg crazy! I love to eat eggs and what better way than to showcase them off in a variety of dishes and include them in my Fab Four blogs of the week!

I start off with the super talented Karinna from “Cheesy Biscuit”, her wonderful array of recipes and dishes will have you mesmerized! Especially her love for Rhubarb! which I am yet to try in my recipes and I’m always inspired when I see many of Karinna’s gorgeous and vibrant pink coloured treats. Thank you for all your support honey! I’m putting rhubarb on my shopping list now!

One dish I have to try this weekend for Sunday Brunch is “Italian baked eggs”. Seriously Italian my favourite cuisine and you know about my love of eggs! This recipe is to die for! Natalie over @ F yea, I’m a chef is a skilled baker and I totally loved the simplicity of her quick rice bowl recipe, of course with a glowing egg seated on top!
Simple, concise and lovely food and drink. Her simple caramel syrup for cold coffee is just too gooood! I can’t wait to make a whole pitcher full!

Peri-peri spicy masala chips

A really lip smacking chips masala that I think allows the ordinary though much loved potato chip come to life!

A masala so moreish that you won’t be able to stop once you’ve started! For all those “Nando’s” lovers out there this peri peri mix likens itself to their famous seasoning! And the best thing is you can have as much as you want as you can mix up some more!

I’m bringing this super duper spice mix to Angie’s awesome party over @ The Novice Gardener!…let’s all sprinkle and shake those chips to the music being played! 🙂

INGREDIENTS

1 tsp smoked paprika
1 tsp garlic granules
1/2 tsp salt
3/4 tsp dried coriander
Fresh lemon juice
(Cayenne pepper optional)

2 plates ready made hot crispy chips ~ I oven bake mine so that they are more healthy!

METHOD

• Throw in all the seasoning ingredients into a non stick plate

Mix well, add the chips and coat well with the masala and finally squeeze a little lemon juice. You can skip the lemon if you want the chips to remain crisp! But I love how it lifts the spices!

Lovely treats…

We are having a very busy weekend, lots of fun and festivities.  Wedding, dressing up, eating and shopping!  My kind of weekend!  I was lucky to pick up a few treats on the way…

Bargain buy £60 to £24! Wooohoooo!!! So pretty and a lovely light scent…

Lunch outside after a trip to the park.  Grilled halloumi cheese with salad encased in a warm flat bread and chunky chips!

And to round it off,  a crisp mint flavourful box of chocolates!  I’ve been craving mint and chocolate for a while.  I think it will satisfy me for now but I will have to bake something minty and chocolatey soon too!

Fresh Baby Leaf Spinach & Garlic Penne

Yesterday I had a really busy day! It was go go go! It was also very warm here in the UK so I didn’t really fancy anything too heavy to eat! We had some fresh baby spinach leaves in the fridge to be used and my husband decided to take control in the kitchen. Yay! dinner was going to be made for me! Wooo hooo! Whilst I carried to clean up after the kids….

I was treated to an aromatic and extremely tasty penne pasta salad with bright green spinach and glorious garlic running through it. Enough garlic to compliment the spinach and chilli flakes to lift the oil dressing. One pasta recipe I know I will be wanting again and again…Thanks H, lots of love xx

INGREDIENTS

1 packet of baby leaf spinach
3~4 tbsp extra virgin olive oil
4 cloves garlic minced
1 tsp dried oregano
Salt to taste
Dried red chilli flakes optional
Pre cooked fresh penne upon instruction

METHOD

Gently heat the garlic with the olive oil, mix and combine the oregano so that it infuses into the oil

Stir in the penne, making sure all the pasta is covered in oil. Season with salt, mix.
Tear in our roughly slice the fresh baby spinach leaves

Turn off the heat, sprinkle in the red chilli flakes and the spinach will wilt a little as you toss the pasta

Serve up with some grated parmesan or in my case some grated mature cheddar to add a sharpness to the dish

Instant Chilli Cheese Garlic Bread!

All of you by now will know that, when I get a craving for something, there is no stopping me. I listen to my body when wanting certain foods. But have to control the naughty cravings! 😉 For example I find that if I’m craving oranges or something orange flavoured, I’m lacking in Vitamin C or a cold could be pending. I got in tune with my body a lot at the time I was pregnant. You feel free to eat almost whatever you want and I felt my body was literally communicating with me via cravings.

I would picture, say a passion fruit and could already yearn for it on my palette, and that actually did happen. My husband and I were driving back from my friends place and I was about 7 months pregnant. I told him to stop the car at the parade of shops and see if he could buy me some passion fruit from the green grocers. The best he could do was a sour hitting can of sparkling passion fruit juice. He had bought me a six pack knowing that I would want more! He knows me too well! Lol!

Here I am sharing with you all, some cheesy chilli garlic bread that was the result of a craving I was having for garlic bread and how it worked wonders..always simple but extremely satisfying…give it a go!

INGREDIENTS

Plain mini pitta breads
Garlic granules
Butter
Cheddar or mozzarella cheese grated
Red chilli flakes or fresh green chilli chopped finely

METHOD

~ Warm up the pitta bread in a toaster of grill, both sides

~ Spread lashings of butter on the pitta and sprinkle with fine garlic granules according to taste, I love garlic! Top off with a whole lot of cheese and melt under the grill

~ Final touch add chilli flakes or green chilli. Now tuck in! I’m going to make myself some more!

Veggie Chilli Cheese Hot Dogs @ Fiesta Friday!

I’m rolling in my hot dog cart, they are vegetarian but will definitely appeal to all. I’ve had this surprise up my sleeve for quite a while and had to share them at my generous friend Angie’s weekly Fiesta Friday Party over @ Angie’s home, the Novice Gardener

Being a vegetarian I’ve always been intrigued by the wonder of the famous hot dog..everyone loves them so. I too adore the aroma of the sweet fried onions when it wafts in the streets when I’m shopping on a busy Saturday afternoon in town. So here I recreate the feeling I always have to devour these and now a vegetarian option! So excited!

The next step for me is to make my own vegetarian sausages. If anyone has a recipe please feel free to link it up to the post! This time I couldn’t resist but to buy these soya based Frankfurters..they are just so tasty. I hope you all enjoy these hot dogs and here’s to a gorgeous weekend for us all! Much love, D x

INGREDIENTS

For the chilli
1 tsp smoked paprika
3 cloves garlic crushed
1/4 tsp cumin powder
1/2 tsp salt or to taste
100g tomato crushed passata
200g frozen soya mince

1 large white onion sliced into crescents
Drop of balsamic vinegar
Pinch of sugar
2 tsp sunflower oil

Pre prepared vegetarian sausages
Grated cheddar cheese
Tomato ketchup
Mustard
Hot dog rolls

METHOD

Heat up 1 teaspoon of oil in a medium saucepan, sauté the garlic with the smoked paprika for 2 minutes

Pour in the tomato passata, sprinkle in the seasoning and cumin powder, simmer for 5 to 7 minutes

Stir in the mince, cover and simmer on a low for 15 minutes

In a shallow frying pan heat up a little oil, stir fry the onion with the balsamic vinegar and sugar until the onion is soft and browned

Assembling the veggie chilli cheese hot dog

Slice the roll longways, spoon in some of the chilli, place 1 or 2 sausages onto the chilli, smother with the onions and cheese. Add mustard and ketchup and enjoy!
