All star breakfast


Love, love, love a cooked English breakfast!!! Always have, especially sunny side up fried eggs and hashbrowns. So here I decided to combine and make the dish fun. A little bit of effort to do the star hashbrowns and eggs but so worth it when I heard my little one singing twinkle twinkle little star as he ate his breakfast! Makes it exciting not just for them but us too…Great start to the day!

Coincidentally tonight is when the Perseid meteor shower reaches its peak and as many as 60-100 shooting stars an hour may be visible at the height of the display! I went outside 15 minutes ago and was extremely lucky to view my first ever shooting star☆ Such a beautiful sight…


500g red potato grated with skin
1 medium onion grated
2 cloves garlic crushed
1 heaped tbsp plain flour
1 tsp salt
1/2 tsp paprika
Oil for pan frying
3 small/medium eggs


1. Put the grated potato, onion, garlic, flour and seasoning into a mixing bowl and combine well using your hands

2. Heat a little oil in a non stick frying pan and split the potato mixture in 3. Take one portion, squeeze excess water out and carefully place into the pan and flatten. Make into a round approximately 2 cm in thickness

3. Keep heat on a medium flame and press the hashbrown to keep it together. Cook it for at least 4 minutes until golden brown and slowly use a spatula to flip it around. Cook on both sides until hashbrown is nice and crispy

4. Once cooked. Place hashbrown onto a plate and cut out a star shape using a metal large star cookie cutter. Leaving a star hashbrown and a star hole to fill. Leave aside

5. Finally place the same metal star cutter into the frying pan with a little oil. Crack the egg gently and on a low flame cook the egg sunny side up. Once egg is done,ease it out of the cutter. You may need to cut it out slowly on a plate. When you have the star fried egg, place in the hashbrown hole to replace where the star hashbrown had been cut from. Repeat with the remainder of potato mixture

6. Serve with a baked tomato, veggie sausages and toast
