Spicy Chickpea Masala

A very easy to do curry in a matter of minutes

INGREDIENTS

2 cans of chickpeas rinsed
1 medium onion diced
2 cloves of garlic crushed
1 tsp grated ginger
1 green chilli chopped
1/2 can of crushed tomatoes
1 tbsp oil
1 tsp chana/garam masala
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp salt
1/4 tsp turmeric powder
2 cloves
1/4 mustard seeds
1/4 cumin seeds
Handful of chopped coriander

METHOD

1. Heat the oil, cloves, mustard seeds and cumin seeds in a medium saucepan. Once seeds start to pop fry onions, chilli, garlic and ginger for 2 minutes

2. Add the tomatoes, salt, ground coriander, cumin, turmeric and chana/garam masala. Mix well. Simmer on a low heat until the oil starts to separate from the tomato base (approx 7 mins)

3. Now add the chickpeas and coat well in the tomato sauce. Cover and simmer on a low heat for a further 10 minutes. Once ready, sprinkle coriander and you are now ready to serve.
