Pizza omelette

My 2 and a half year old son likes omelettes but loves pizza. So I decided to combine both favorites and I came up with the pizza omelette packed full of protein and less of the carbohydrates. A very simple recipe for little people.

•1 large egg

•splash of milk

• season with salt and pepper to taste

•1 tbsp olive oil

•4 slices of tomato

•Handful of grated mozzarella cheese

•2 tbsp tomato passata or crushed

•A pinch of oregano

To make omelette base
1.Whisk egg in a small bowl and add splash of milk. Season to taste

2.Add the olive oil and egg mixture to a 20 cm omelette pan and cook the omelette till nice and golden brown on both sides

3.Once omelette is ready place on a oven proof tray. Spread the tomato passata on the omelette. Lay the sliced tomatoes on and sprinkle the oregano

4.Lastly cover with the grated mozzarella and grill for 4-5 minutes on medium setting til cheese is browned and crisp.

5. You can always add other toppings to the omelette base according to your own preference.
